Where will this course lead?

This qualification is aimed at supervisors, team leaders and line managers working in the catering industry including those working in the care sector. The qualification is also suitable for those who own/manage a small catering business.

What will I study?

This three day course will provide you with the knowledge and understanding to put in place a food-safety culture in a professional kitchen. It is ideally suited to business owners or staff who supervise a kitchen. 

This course covers the nationally approved syllabus and content for Level 3 Supervising Food Safety, with additional content in supervisory skills. It includes the following content highlights:

  • Knowledge needed to authoritatively supervise food production and food service
  • Awareness of latest UK and EU food legislation affecting the catering industry
  • In-depth understanding and control of a range of food poisoning threats
  • Ability to design or improve HACCP based food safety management systems
  • In-depth understanding of safe approaches to cooking, chilling, reheating, and displaying food
  • How to apply latest allergenic ingredient advice and standards
  • Supervisory skills to train and lead a team of food handlers
  • Latest cleaning, waste management, pest control , and food poisoning science facts

What are the entry requirements?

There are no prerequisites for completing the Highfield Level 3 Award in Food Safety in Catering, as the required knowledge and understanding of food safety are covered in the training. However Highfield recommends that candidates should have a minimum of Level 2 in literacy or equivalent to undertake this qualification and ideally have completed a Level 2 in Food safety.
